In Moments of Weekness One Must Find an Alternative
I crave cheese. I crave it almost everyday. Cheese and Mexican food actually. So I decided since one cheat meal isnt enough for me, especially in those tough moments, I had to find some crazy vegan alternative.
Ive been to quite a few food stores looking for things that could be non-dairy and things that could be lunch or dinner alternatives that dont have bread, wheat or pasta in it and I realized... its really fricken tough!!! I started to miss Whole Foods, but you know me and going into former work places (totally insane I know). So I decided to hit up one more spot... Super Stop and Shop. And I actually did well.
First, I hit up the frozen aisle, because its really difficult preparing not just one dinner, but two a day. So I found:
1. Garden Lites: I had previously seen these at Whole Foods. I have yet to try them but Ive heard good things. The spinach one is 140 calories and 1 gram of fat for the whole package. The butternut squash souffle is 180 calories and 2 grams of fat for the whole package. The butternut squash one does have a lot of sugar (18 grams) but is high in fiber (5 grams) and is a once a week (or every other) week kind of thing. I just have to make sure to not eat any thing that really contains sugar that day.
2. Tofutti "Sour Cream": I had this today and it wasnt bad... just wasnt amazing. Kristen (who loves sour cream) absolutely hated it. I think I just wanted the texture and when I paired it with refried beans and a corn tortilla, it blended well and tasted like the real thing.
3. Smart Beat Vegan Soy Cheese: 0 Fat, 25 calories per slice, and gets the job done. Its mild, but it works.
4. Best Life Buttery Spread: Dairy free margarine recommended by Oprahs health guru Bob Greene. And it tastes just like regular margarine. Im gonna use this for the arborio now.
Weight: 135
Breakfast: 2 egg whites, ham
Lunch: 2 corn tortillas with refried beans, tofutti sour cream and 1 slice of Smart Beat with lettuce, onion powder and cumin. Tasted like an actual burrito wrap.
Dinner 1: Brown rice pesto pasta with a turkey burger patty.
Dinner 2?
